How to make it

  • Combine dill weed and flour in a small bowl.
  • Puree the white beans and add water until it reaches a "liquid" consistency, and then place in a small bowl.
  • Add desired amount of soy sauce to the spinach and mix thoroughly. You can use as much or as little as you want. Usually a couple seconds of sprinkling the sauce is sufficient.
  • Slice tofu into small squares, make sure they are around 1/4 inch thick--they can be any length/width, depending on your preference.
  • Make a "sandwich" by layering spinach between two slices of tofu.
  • Take the sandwich and pat it in the flour and dill weed mixture until completely covered. Don't forget the sides!
  • Dip the sandwich in the white bean paste until completely covered. This is where it gets messy :)
  • Cover the sandwich in the bread crumbs. It should feel pretty stable after this point, and ready to be fried.
  • Pan fry in the conola oil until golden brown on top, bottom, and sides.
  • Serve with brown ginger sauce or your favorite asian sauce--this can make or breaks the dish, so pick something you love!

    I made these every Wednesday working at Nana's for a year but still I lost my written recipe and forgot a number of the steps. I'm so glad I found this online. Literally the first thing that came up when I searched tofu sandwich with spinach. Thanks so much for posting. For the other commenter here (I know it was a while ago): there's a recipe from Fine cooking - Rotini with Ground Pork and Spicy Peanut Sauce - that's really similar to what I think you mean by the tofu pate. I sub out the pork for tofu (which I press the water out of first) and I don't add the rotini and this mixture tastes really similar to the tofu that Nana would add to that tofu wrap.

    Tofu sandwich was my favorite at Nana's but I really need to know how to make the tofu pate. I can't even remember exactly what it tastes like, let alone what could possibly be in it.
