How to make it

  • Whist together 6 egg yolks, 1/4 cup flour and 3/4 cup sugar - set aside
  • Stir together 1/2 cup sugar, 1/2 cup lemon juice, 1/2 cup water over medium heat til disolved - set aside
  • In heavy saucepan, heat 2 cup milk until just bubbling around edges
  • Whisk 1/2 of themilk into the egg yolk mixture
  • Whisk egg/milk mixture back into the remaining milk
  • Cook until boiling and thickened
  • Add 1/4 cup butter (cubed) and 2 oz of finely chopped white chocolate
  • Stir until melted
  • Strain through sieve into a bowl
  • Add 1 tbsp grated lemon rind and 1/4 cup lemon juice
  • Place plastic wrap on surface & chill in fridge (up to 2 days)
  • Whip 1 cup mascarpone (or cream cheese)
  • Whisk in the chilled lemon custard
  • Fold in whipped cream (1/3 at a time)
  • Brush lady finers with lemon syrup (step 2)
  • Layer ladyfingers and filling
  • Cover and refrigerate (up to 24 hours)
  • Garnish with blueberries and mint leaves.
