A delicious update to a classic favorite. This meatloaf is great the next day as a cold appetizer with hot-sweet mustard, or pressed into a panini inside a crusty french baguette with roasted red peppers.

Ingredients
  • 3/4 pound fresh ground chuck
  • 3/4 pound fresh ground chicken
  • 1/2 cup dry white wine
  • 1/2 cup plus 2 tablespoons of prepared chili sauce
  • 3/4 cup uncooked oats (do not use "instant")
  • 1 large egg, beaten
  • 1 tablespoon heavy cream or half-n-half
  • 1/4 cup dried onion flakes
  • 3/4 teaspoon seasoned salt
  • 1 teaspoon dried parsley

Directions
  1. Pre-heat oven to 350. Reserve 2 tablespoons of chili sauce. Mix all other ingredients together in a large bowl by hand (lightly but thoroughly - do not overwork the meat or it won't be tender). Press mixture into a loaf pan sprayed with cooking spray. Spread reserved 2 tablespoons of chili sauce over the top of the meatloaf. Bake uncovered for approximately one hour or until internal temperature reaches at least 165 F. Remove from oven, let stand for 5 minutes, slice and enjoy.
