Well Dressed Barley Salad Recipe
This is a very nice salad. I obtained this from a friend who brought this to a big cookout a few weeks ago. This stuff was gobbled up and rightfully so, it is fantastic.

Ingredients
  • 2 tablespoons olive oil
  • 1 cup uncooked barley
  • 4 cups cold water
  • 1/4 teaspoon salt
  • 2 cups cooked black-eyed peas
  • 2 cups savoy cabbage finely julienned
  • 2 cups spinach finely julienned
  • 3/4 cup crumbled feta cheese
  • 1 medium red onion chopped
  • 7 ounces roasted red peppers diced
  • 1/4 cup chopped parsley
  • 20 oil cured olives pitted and diced
  • 1 tablespoon fresh oregano leaves chopped
  • Dressing:
  • 2 large cloves garlic crushed
  • 1/2 teaspoon salt
  • 1 teaspoon coarsely ground black pepper
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1/4 cup extra-virgin olive oil

Directions
  1. Combine oil and barley and sauté 2 minutes over medium heat.
  2. Add water and salt then bring to a boil.
  3. Reduce heat then simmer uncovered 25 minutes and add peas.
  4. Cover and cook 20 minutes stirring occasionally.
  5. On cutting board chop garlic with salt until paste forms then place in small jar.
  6. Add remaining dressing ingredients then shake to blend.
  7. Place barley in bowl then cool completely.
  8. Add remaining ingredients and dressing then toss.
