Well Dressed Barley Salad

- 2 tablespoons olive oil shopping list
- 1 cup uncooked barley shopping list
- 4 cups cold water shopping list
- 1/4 teaspoon salt shopping list
- 2 cups cooked black-eyed peas shopping list
- 2 cups savoy cabbage finely julienned shopping list
- 2 cups spinach finely julienned shopping list
- 3/4 cup crumbled feta cheese shopping list
- 1 medium red onion chopped shopping list
- 7 ounces roasted red peppers diced shopping list
- 1/4 cup chopped parsley shopping list
- 20 oil cured olives pitted and diced shopping list
- 1 tablespoon fresh oregano leaves chopped shopping list
- Dressing: shopping list
- 2 large cloves garlic crushed shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon coarsely ground black pepper shopping list
- 2 tablespoons fresh lemon juice shopping list
- 2 tablespoons red wine vinegar shopping list
- 1/4 cup extra-virgin olive oil shopping list
How to make it
- Combine oil and barley and sauté 2 minutes over medium heat.
- Add water and salt then bring to a boil.
- Reduce heat then simmer uncovered 25 minutes and add peas.
- Cover and cook 20 minutes stirring occasionally.
- On cutting board chop garlic with salt until paste forms then place in small jar.
- Add remaining dressing ingredients then shake to blend.
- Place barley in bowl then cool completely.
- Add remaining ingredients and dressing then toss.
