How to make it

  • Combine oil and barley and sauté 2 minutes over medium heat.
  • Add water and salt then bring to a boil.
  • Reduce heat then simmer uncovered 25 minutes and add peas.
  • Cover and cook 20 minutes stirring occasionally.
  • On cutting board chop garlic with salt until paste forms then place in small jar.
  • Add remaining dressing ingredients then shake to blend.
  • Place barley in bowl then cool completely.
  • Add remaining ingredients and dressing then toss.
