Serrano Wrapped Chicken With Salad And Salsa Verde Recipe

Ingredients
  • 8 slices Serrano ham
  • 4 chicken breast (1/2's)
  • 1/2 cup fresh basil
  • 1 cup chopped parsley
  • 1 TBS capers
  • 1 tsp Dijon mustard
  • 1 clove garlic
  • 1/4 cup olive oil
  • 8 small fresh carrots
  • 8 asparagus
  • 3 cups fresh spinach
  • 4 medium potatoes
  • 12 radishes
  • 1 TBS olive oil
  • Salt and pepper

Directions
  1. Pound the chicken breasts so that they are a bit flatter, not too thin.
  2. Wrap chicken parts in ham.
  3. Place in 7 X 11 pyrex dish or similar.
  4. Bake at 325 F for about 15 minutes.
  5. Pesto:
  6. Place basil, parsley, capers and mustard in blender or processor.
  7. Add pressed garlic.
  8. With machine running, slowly pour in olive oil until mixture is smooth.
  9. Add salt and pepper.
  10. Pulse a couple of times to blend.
  11. Veggies:
  12. Cook peeled potatoes, quartered.
  13. Cook skinned carrots and asparagus.
  14. Wash spinach and blend with the potatoes, carrots, asparagus.
  15. Add sliced radishes and the 1 TBS olive oil.
  16. Add salt and pepper.
  17. Arrange chicken and veggies on plates.
  18. Drizzle the pesto over. Enjoy!
