Serrano Wrapped Chicken with Salad and Salsa Verde

- 8 slices Serrano ham shopping list
- 4 chicken breast (1/2's) shopping list
- 1/2 cup fresh basil shopping list
- 1 cup chopped parsley shopping list
- 1 TBS capers shopping list
- 1 tsp Dijon mustard shopping list
- 1 clove garlic shopping list
- 1/4 cup olive oil shopping list
- 8 small fresh carrots shopping list
- 8 asparagus shopping list
- 3 cups fresh spinach shopping list
- 4 medium potatoes shopping list
- 12 radishes shopping list
- 1 TBS olive oil shopping list
- salt and pepper shopping list
How to make it
- Pound the chicken breasts so that they are a bit flatter, not too thin.
- Wrap chicken parts in ham.
- Place in 7 X 11 pyrex dish or similar.
- Bake at 325 F for about 15 minutes.
- Pesto:
- Place basil, parsley, capers and mustard in blender or processor.
- Add pressed garlic.
- With machine running, slowly pour in olive oil until mixture is smooth.
- Add salt and pepper.
- Pulse a couple of times to blend.
- Veggies:
- Cook peeled potatoes, quartered.
- Cook skinned carrots and asparagus.
- Wash spinach and blend with the potatoes, carrots, asparagus.
- Add sliced radishes and the 1 TBS olive oil.
- Add salt and pepper.
- Arrange chicken and veggies on plates.
- Drizzle the pesto over. Enjoy!
