How to make it

  • Pound the chicken breasts so that they are a bit flatter, not too thin.
  • Wrap chicken parts in ham.
  • Place in 7 X 11 pyrex dish or similar.
  • Bake at 325 F for about 15 minutes.
  • Pesto:
  • Place basil, parsley, capers and mustard in blender or processor.
  • Add pressed garlic.
  • With machine running, slowly pour in olive oil until mixture is smooth.
  • Add salt and pepper.
  • Pulse a couple of times to blend.
  • Veggies:
  • Cook peeled potatoes, quartered.
  • Cook skinned carrots and asparagus.
  • Wash spinach and blend with the potatoes, carrots, asparagus.
  • Add sliced radishes and the 1 TBS olive oil.
  • Add salt and pepper.
  • Arrange chicken and veggies on plates.
  • Drizzle the pesto over. Enjoy!
