Eggplant A La Haxdis

- The ingredients are PER PERSON shopping list
- 2 small eggplant (Japanese) shopping list
- 100 grams (1/4 pound) ground beef shopping list
- 2 garlic cloves shopping list
- 1/2 yellow onion, chopped fine shopping list
- 1 carrot, grated shopping list
- 1/4 tsp grill spices shopping list
- 1/2 can crushed tomatoes shopping list
- oil for sauteing. shopping list
How to make it
- Saute onion in oil until soft.
- Add and blend the ground meat, carrot, spices.
- Continue to saute until the meat has browned.
- Add tomatoes and 1/2 cup water.
- Simmer about 20 minutes.
- Meanwhile: Make small cuts with a sharp knive all over the eggplant where you will insert slivers of garlic.
- Place the garlic-inserted eggplant in an oven safe serving dish.
- Pour over the sauted mixture.
- Bake 45-60 minutes at 375 F (200C) .
- After 20 minutes of cooking, lay over a parchment paper so it does not get too brown.
