Eggplant A La Haxdis Recipe
Authentic Turkish dish from my classmate, Haxdis. Easy to make for any number of guests.

Ingredients
  • The ingredients are PER PERSON
  • 2 small eggplant (Japanese)
  • 100 grams (1/4 pound) ground beef
  • 2 garlic cloves
  • 1/2 yellow onion, chopped fine
  • 1 carrot, grated
  • 1/4 tsp grill spices
  • 1/2 can crushed tomatoes
  • Oil for sauteing.

Directions
  1. Saute onion in oil until soft.
  2. Add and blend the ground meat, carrot, spices.
  3. Continue to saute until the meat has browned.
  4. Add tomatoes and 1/2 cup water.
  5. Simmer about 20 minutes.
  6. Meanwhile: Make small cuts with a sharp knive all over the eggplant where you will insert slivers of garlic.
  7. Place the garlic-inserted eggplant in an oven safe serving dish.
  8. Pour over the sauted mixture.
  9. Bake 45-60 minutes at 375 F (200C) .
  10. After 20 minutes of cooking, lay over a parchment paper so it does not get too brown.
