How to make it

  • Saute onion in oil until soft.
  • Add and blend the ground meat, carrot, spices.
  • Continue to saute until the meat has browned.
  • Add tomatoes and 1/2 cup water.
  • Simmer about 20 minutes.
  • Meanwhile: Make small cuts with a sharp knive all over the eggplant where you will insert slivers of garlic.
  • Place the garlic-inserted eggplant in an oven safe serving dish.
  • Pour over the sauted mixture.
  • Bake 45-60 minutes at 375 F (200C) .
  • After 20 minutes of cooking, lay over a parchment paper so it does not get too brown.
