Autumn Minestrone Soup

- 1 medium onion, chopped shopping list
- 4 cloves garlic, minced shopping list
- ¼ cup dry sherry shopping list
- 4 cup veggie stock shopping list
- 28 oz can roma tomatoes, chopped and Undrained shopping list
- 15 oz can kidney beans, drained and rinsed shopping list
- 1 ½ Tablespoons tomato paste shopping list
- 2 medium celery, chopped shopping list
- 2 medium carrots, chopped shopping list
- ½ lb fresh green beans, sliced shopping list
- 1 teaspoon salt shopping list
- 1 splash Tobasco sauce -- optional shopping list
- 2 teaspoon basil shopping list
- 2 teaspoon oregano shopping list
- ½ cup small macaroni shells shopping list
How to make it
- Saute onion and garlic in sherry until translucent.
- Add everything else and bring to a boil over medium high heat. Reduce heat.
- Cover.
- Simmer 30 minutes, stirring.
