Autumn Minestrone Soup Recipe
This is a great , healthy bowl of soup for a chilly autumn day.

Ingredients
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • ¼ cup dry sherry
  • 4 cup veggie stock
  • 28 oz can Roma Tomatoes, chopped and Undrained
  • 15 oz can kidney beans, drained and rinsed
  • 1 ½ Tablespoons Tomato paste
  • 2 medium celery, chopped
  • 2 medium carrots, chopped
  • ½ lb fresh green beans, sliced
  • 1 teaspoon salt
  • 1 splash Tobasco sauce -- optional
  • 2 teaspoon basil
  • 2 teaspoon oregano
  • ½ cup small macaroni shells

Directions
  1. Saute onion and garlic in sherry until translucent.
  2. Add everything else and bring to a boil over medium high heat. Reduce heat.
  3. Cover.
  4. Simmer 30 minutes, stirring.
