If you like beets you will love this dip. It is very tasty, very pretty and very tasty. I tasted this at my bosses house about a year ago and fell in love with it instantly. Enjoy

Ingredients
  • 1 pound beets soft cooked peeled and chopped
  • 4 ounces soft tofu drained
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons minced shallots
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried tarragon

Directions
  1. Puree ingredients in a food processor or blender until smooth.
  2. Adjust seasonings adding more vinegar and salt to taste.
  3. Serve immediately or refrigerate in tightly sealed container for up to 3 days.
