Brilliant Beet Dip

- 1 pound beets soft cooked peeled and chopped shopping list
- 4 ounces soft tofu drained shopping list
- 1 tablespoon apple cider vinegar shopping list
- 2 tablespoons minced shallots shopping list
- 1/2 teaspoon dry mustard shopping list
- 1/2 teaspoon dried thyme shopping list
- 1/2 teaspoon dried tarragon shopping list
How to make it
- Puree ingredients in a food processor or blender until smooth.
- Adjust seasonings adding more vinegar and salt to taste.
- Serve immediately or refrigerate in tightly sealed container for up to 3 days.
