Swordfish with bananas

- 2 tbsp. oil shopping list
- 1 onion thinly sliced shopping list
- 1 small green capsicum ( pepper ) sliced shopping list
- Pinch of dried chili flakes shopping list
- Pinch of freshly grated nutmeg shopping list
- 2 tomatoes shopping list
- 2 bananas shopping list
- 4x200 gm.( 7 oz ) swordfish steaks shopping list
- 250 ml. ( 1 cup ) coconut milk shopping list
- coriander leaves for garnish shopping list
How to make it
- Heat the oil in a large deep pan frying or sauté pan then add the onion.
- Cook for 5 minutes the add the green capsicum, chili and nutmeg.
- Cook for a further 3-4 minutes or until the onion and pepper are soft.
- Meanwhile, score a cross in the base of each tomato.
- Cover with boiling water for 30 seconds, thin plunge into cold water.
- Drain and peel the skin away from the cross.
- Cut each one into quarter .
- Peel the bananas and cut into chunk on the diagonal.
- Put the swordfish steak in the pan on top of the onion and capsicum.
- Scatter the tomato quarters and bananas over the top .
- Pour the coconut milk into the pan and season with salt and pepper.
- Cover and cook gently for 15 minutes or until the fish is cooked.
- Garnish with coriander leaves and serve with rice.
