Ingredients
  • 2 tbsp. oil
  • 1 onion thinly sliced
  • 1 small green capsicum ( pepper ) sliced
  • Pinch of dried chili flakes
  • Pinch of freshly grated nutmeg
  • 2 tomatoes
  • 2 bananas
  • 4x200 gm.( 7 oz ) swordfish steaks
  • 250 ml. ( 1 cup ) coconut milk
  • Coriander leaves for garnish

Directions
  1. Heat the oil in a large deep pan frying or sauté pan then add the onion.
  2. Cook for 5 minutes the add the green capsicum, chili and nutmeg.
  3. Cook for a further 3-4 minutes or until the onion and pepper are soft.
  4. Meanwhile, score a cross in the base of each tomato.
  5. Cover with boiling water for 30 seconds, thin plunge into cold water.
  6. Drain and peel the skin away from the cross.
  7. Cut each one into quarter .
  8. Peel the bananas and cut into chunk on the diagonal.
  9. Put the swordfish steak in the pan on top of the onion and capsicum.
  10. Scatter the tomato quarters and bananas over the top .
  11. Pour the coconut milk into the pan and season with salt and pepper.
  12. Cover and cook gently for 15 minutes or until the fish is cooked.
  13. Garnish with coriander leaves and serve with rice.
