spanish style meatballs

- 2 peeled and sliced carrots shopping list
- 2 Tbsp chopped parsley shopping list
- 2 Tbsp chopped sage shopping list
- 1 egg shopping list
- 1 chopped (optional) green pepper shopping list
- 500g pork Mince shopping list
- 2 Tbsp oil shopping list
- 1 peeled and chopped onion shopping list
- 2 tsp paprika shopping list
- salt and pepper to season shopping list
- 1/4 cup short grain rice shopping list
- 1 cup water shopping list
- 420g can condensed tomato soup, salt Reduced shopping list
How to make it
- 1. In a bowl mix together the mince, rice, herbs, paprika and egg. Season with salt and pepper. Roll into 16 even sized balls.
- 2. Heat the oil in a large flame-proof casserole dish and quickly brown the meatballs evenly.
- 3. Add the onion, carrots, peppers, Tomato Soup (Salt Reduced) and water to the casserole and stir to mix.
- 4. Cover and simmer on top of the stove for 40-45 minutes until the meatballs are tender and the rice is cooked.
