Spanish Style Meatballs Recipe
This is an easy meal to prepare and cook – either on top of the stove or in the oven.

Ingredients
  • 2 peeled and sliced carrots
  • 2 Tbsp chopped parsley
  • 2 Tbsp chopped sage
  • 1 egg
  • 1 chopped (optional) green pepper
  • 500g Pork Mince
  • 2 Tbsp oil
  • 1 peeled and chopped onion
  • 2 tsp paprika
  • salt and pepper to season
  • 1/4 cup short grain rice
  • 1 cup water
  • 420g can Condensed Tomato Soup, Salt Reduced

Directions
  1. 1. In a bowl mix together the mince, rice, herbs, paprika and egg. Season with salt and pepper. Roll into 16 even sized balls.
  2. 2. Heat the oil in a large flame-proof casserole dish and quickly brown the meatballs evenly.
  3. 3. Add the onion, carrots, peppers, Tomato Soup (Salt Reduced) and water to the casserole and stir to mix.
  4. 4. Cover and simmer on top of the stove for 40-45 minutes until the meatballs are tender and the rice is cooked.
