Truffled Insalata Caprese Recipe
My take on Insalata Caprese - a great use for all of those summer sun-ripened tomatoes and fresh basil. I like to serve this with a freshly baked baguette.

Ingredients
  • 16 oz. FRESH mozzarella
  • 3 -4 ripe tomatoes (whatever you have that's yummy, romas work well)
  • 2 tbls. fresh basil
  • 1 tsp. balsamic vinegar
  • 1 tsp. white truffle oil

Directions
  1. Slice the mozzarella and tomatoes, arrange beautifully on a plate - I usually alternate, or stack a tomato slice on a mozzarella slice.
  2. Chiffonade the basil leaves: stack the leaves and roll tightly, the long way. Slice thinly, separate the slices - you'll now have basil ribbons.
  3. Sprinkle basil over cheese and tomatoes. Drizzle truffle oil and balsamic vinegar over everything.
  4. Serve.
