Truffled Insalata Caprese

- 16 oz. FRESH mozzarella shopping list
- 3 -4 ripe tomatoes (whatever you have that's yummy, romas work well) shopping list
- 2 tbls. fresh basil shopping list
- 1 tsp. balsamic vinegar shopping list
- 1 tsp. white truffle oil shopping list
How to make it
- Slice the mozzarella and tomatoes, arrange beautifully on a plate - I usually alternate, or stack a tomato slice on a mozzarella slice.
- Chiffonade the basil leaves: stack the leaves and roll tightly, the long way. Slice thinly, separate the slices - you'll now have basil ribbons.
- Sprinkle basil over cheese and tomatoes. Drizzle truffle oil and balsamic vinegar over everything.
- Serve.
