Artichoke Frittata

- 1 14 oz can artichoke hearts drained and cut into bite size pieces shopping list
- 1 tablespoon olive oil divided shopping list
- 1/2 cup minced green onions shopping list
- 5 eggs shopping list
- 4 pieces of bacon fried crisp and crumbled(optional) shopping list
- 2 tablespoons parmesan cheese shopping list
- 1 tablespoon minced fresh parsley shopping list
- 1 teaspoon salt shopping list
- black pepper to taste shopping list
How to make it
- drain and cut artichokes
- mince onions and parsley
- fry bacon and crumble it
- heat 1/2 of the oil in a skillet and cook the green onions until tender and remove from skillet
- beat eggs in a med bowl until fluffy
- stir in artichokes, bacon, onions, parsley, cheese, salt, and pepper
- heat the remaining oil in the skillet on (medium heat)
- pour egg/artichoke mixture into skillet
- cook 4 to 5 minutes or until bottom is lightly browned
- place plate over skillet and turn out the frittata
- slide the frittata uncooked side down back into the skillet
- cook another 4 to 5 minutes until the center is just set.
- plate, cut into wedges, and serve
