How to make it

  • drain and cut artichokes
  • mince onions and parsley
  • fry bacon and crumble it
  • heat 1/2 of the oil in a skillet and cook the green onions until tender and remove from skillet
  • beat eggs in a med bowl until fluffy
  • stir in artichokes, bacon, onions, parsley, cheese, salt, and pepper
  • heat the remaining oil in the skillet on (medium heat)
  • pour egg/artichoke mixture into skillet
  • cook 4 to 5 minutes or until bottom is lightly browned
  • place plate over skillet and turn out the frittata
  • slide the frittata uncooked side down back into the skillet
  • cook another 4 to 5 minutes until the center is just set.
  • plate, cut into wedges, and serve
