easy to make fool proof frittata. you can use any filling i chose artichokes because i love them.

Ingredients
  • 1 14 oz can artichoke hearts drained and cut into bite size pieces
  • 1 tablespoon olive oil divided
  • 1/2 cup minced green onions
  • 5 eggs
  • 4 pieces of bacon fried crisp and crumbled(optional)
  • 2 tablespoons parmesan cheese
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon salt
  • black pepper to taste

Directions
  1. drain and cut artichokes
  2. mince onions and parsley
  3. fry bacon and crumble it
  4. heat 1/2 of the oil in a skillet and cook the green onions until tender and remove from skillet
  5. beat eggs in a med bowl until fluffy
  6. stir in artichokes, bacon, onions, parsley, cheese, salt, and pepper
  7. heat the remaining oil in the skillet on (medium heat)
  8. pour egg/artichoke mixture into skillet
  9. cook 4 to 5 minutes or until bottom is lightly browned
  10. place plate over skillet and turn out the frittata
  11. slide the frittata uncooked side down back into the skillet
  12. cook another 4 to 5 minutes until the center is just set.
  13. plate, cut into wedges, and serve
