Andes Mint Brownies Recipe
I thought of these maybe 2-3 years ago, and finally decided to act upon the idea. Oh my. Super-minty and DELICIOUS.

Ingredients
  • 1 cup all-purpose flour
  • ½ cup cocoa
  • 3/4 tsp. baking powder
  • ¼ tsp. salt
  • 1¼ cups granulated sugar
  • 3/4 cup butter, melted
  • 2 tsp. vanilla
  • 3 eggs
  • ½ to 1 cup Andes Mint Baking Chips
  • 28-30 Andes Mint Chocolates (the full size ones)

Directions
  1. Preheat oven to 350F. Grease a 9-inch square baking pan.
  2. Combine flour, cocoa, baking powder, and salt in a medium bowl.
  3. Beat sugar, butter, and vanilla together in a large mixer bowl, until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in baking chips.
  4. Pour half of the batter into the prepared baking pan. Cover the batter with the full-size Andes Mints. Carefully spread remaining batter over mint layer.
  5. Bake at 350F for 25-30 minutes. Cool on a wire rack (center will sink slightly)
