How to make it

  • Preheat oven to 350F. Grease a 9-inch square baking pan.
  • Combine flour, cocoa, baking powder, and salt in a medium bowl.
  • Beat sugar, butter, and vanilla together in a large mixer bowl, until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in baking chips.
  • Pour half of the batter into the prepared baking pan. Cover the batter with the full-size Andes Mints. Carefully spread remaining batter over mint layer.
  • Bake at 350F for 25-30 minutes. Cool on a wire rack (center will sink slightly)
