Onion and beet Salad

- 2 1/2 lbs beets, peeled and halves shopping list
- 5 tbs olive oil divided shopping list
- 1 large red onion chopped shopping list
- 1/2 cup aged balsamic vinegar shopping list
- 1/3 cup red wine vinegar shopping list
- 1/4 cup sagar shopping list
- 1 tsp salt shopping list
- 1 tsp dried basil shopping list
- 1/4 tsp black pepper shopping list
How to make it
- Place beets in plastic bag with 2 Tbs oil.
- Shake to coat.
- Place a sheet of foil in a 10 x 15 baking pan.
- Arrange beets on foil and cover with more foil and seal edges.
- Bake 400F about 1 to 1 1/4 hours or tender.
- Cool to room temp.
- Cut beets into cubes.
- Add onions.
- Whisk vinegar, sugar, salt, pepper, basil and remaining oil.
- Pour over beets.
- Toss to coat.
- Chill at least one hour
