Chicken And Mushroom Soup Recipe

Ingredients

1/2 lb mushrooms

1/4 cup each: onion, carrots, celery chopped

1/4 cup butter

1/2 cup flour

5 1/2 cups chicken broth

1 tsp pepper

1/4 tsp dried thyme

pinch dried tarragon

1 tsp hot ppeer sauce ( optional )

3 cups cream or half and half

2 1/2 cups cooked chicken cubed

1 tbs chopped fresh parsley

1 1/2 tsp lemon juice

1/2 tsp salt or to taste

Directions

Saute mushrooms and vegetable in butter until softened and tender

Stir in flour to blend.

Add broth and seasonings and stir well.

Bring to a boil then simmer , stirring uncovered 10 minutes.

Stir in the cream, chicken, parsley, lemon juice and salt and simmer through - do not let boil
