Chicken and Mushroom Soup

- 1/2 lb mushrooms shopping list
- 1/4 cup each: onion, carrots, celery chopped shopping list
- 1/4 cup butter shopping list
- 1/2 cup flour shopping list
- 5 1/2 cups chicken broth shopping list
- 1 tsp pepper shopping list
- 1/4 tsp dried thyme shopping list
- pinch dried tarragon shopping list
- 1 tsp hot ppeer sauce ( optional ) shopping list
- 3 cups cream or half and half shopping list
- 2 1/2 cups cooked chicken cubed shopping list
- 1 tbs chopped fresh parsley shopping list
- 1 1/2 tsp lemon juice shopping list
- 1/2 tsp salt or to taste shopping list
How to make it
- Saute mushrooms and vegetable in butter until softened and tender
- Stir in flour to blend.
- Add broth and seasonings and stir well.
- Bring to a boil then simmer , stirring uncovered 10 minutes.
- Stir in the cream, chicken, parsley, lemon juice and salt and simmer through - do not let boil
