Vegetable Frittata

- 1 cup sliced mushrooms shopping list
- 2/3 cups chopped onion shopping list
- 2 /3 cup chopped green or red pepper shopping list
- 1 1/2 cups chopped zucchini,unpeeled shopping list
- 3 cloved garlic,minced shopping list
- 3 tbs olive oil shopping list
- salt and pepper to taste shopping list
- 6 eggs,beaten shopping list
- 1/2 cup half and half shopping list
- 4 tbs dry vermouth shopping list
- 1/2 teaspoon salt shopping list
- dash freshly grounf black pepper shopping list
- 1 cup soft bread cubed shopping list
- 8 oz pkg cream cheese,cubed shopping list
- 1 1/2 cups shredded cheddar cheese shopping list
How to make it
- Sautee the vegetables in olive oil until just crisp
- sprinkle salt and pepper,remove from heat
- beat the eggs,adding the half and half,vermouth,salt and pepper to tatste
- add vegetable mixture and bread cubes
- fold the cream cheese carefully so the cubs remain intact
- pour into a well greased 8 x12 oven proof babking pan
- sprinkle top with cheddar cheese.
- bake 30 to 40 min in 350 oven,until just firm
- let rest 10 min before serving
