Ingredients
  • 1 cup sliced mushrooms
  • 2/3 cups chopped onion
  • 2 /3 cup chopped green or red pepper
  • 1 1/2 cups chopped zucchini,unpeeled
  • 3 cloved garlic,minced
  • 3 tbs olive oil
  • salt and pepper to taste
  • 6 eggs,beaten
  • 1/2 cup half and half
  • 4 tbs dry vermouth
  • 1/2 teaspoon salt
  • dash freshly grounf black pepper
  • 1 cup soft bread cubed
  • 8 oz pkg cream cheese,cubed
  • 1 1/2 cups shredded cheddar cheese

Directions
  1. Sautee the vegetables in olive oil until just crisp
  2. sprinkle salt and pepper,remove from heat
  3. beat the eggs,adding the half and half,vermouth,salt and pepper to tatste
  4. add vegetable mixture and bread cubes
  5. fold the cream cheese carefully so the cubs remain intact
  6. pour into a well greased 8 x12 oven proof babking pan
  7. sprinkle top with cheddar cheese.
  8. bake 30 to 40 min in 350 oven,until just firm
  9. let rest 10 min before serving
