Sunday Brunch Dilly Casserole Recipe
Another great breakfast casserole with a nice dilly twist. This is a recipe that I got from my Aunt Margaret who made it for years and years. I ate this over 40 years ago, so I know it is at least that old. Enjoy

Ingredients
  • 1/2 pound sliced bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 12 eggs
  • 1 cup milk
  • 16 ounce package frozen hash brown potatoes thawed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon dill weed

Directions
  1. Cook bacon until crisp then remove with a slotted spoon crumble and set aside.
  2. In the drippings sauté onion and green pepper until tender then remove with a slotted spoon.
  3. Beat eggs and milk in a large bowl.
  4. Stir in hash browns, cheese, salt, pepper, dill, onion, green pepper and bacon.
  5. Transfer to a greased rectangular baking dish then bake uncovered at 350 for 45 minutes.
