Bourbon Pie Recipe
This is an elegant and very tasty pie. It is extremely sweet so a little goes a long way. Especially good for special occasions. Enjoy.

Ingredients
  • 1 cup plus 2 tablespoons all purpose flour
  • 1/8 teaspoon salt
  • 1/2 stick unsalted butter
  • 2 tablespoons vegetable shortening
  • 1/4 cup cold water
  • Filling:
  • 3 eggs
  • 1/2 teaspoon salt
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 tablespoon bourbon
  • 1 cup chopped pecan pieces

Directions
  1. For pastry add the shortening and butter to flour and salt.
  2. Work mixture with fingertips until it resembles corn flakes.
  3. Blend in water until all ingredients can be worked into a ball then chill.
  4. Roll out dough and fit into a 9" pie pan.
  5. Fill with pie weights or dry beans to keep sides from collapsing and bake at 425 for 5 minutes.
  6. Remove from oven and lower temperature to 350.
  7. Mix all filling ingredients together and pour into shell then bake 50 minutes.
  8. Serve with freshly whipped cream or vanilla ice cream.
