How to make it

  • prepare rice as directed on the package - we usually bring the cup of water to a boil and then add the rice and simmer on low heat for 20 minutes.
  • when the rice is done, let it cool for a minute or two before adding the egg
  • mix the egg and rice (doing this before adding it in the pan makes sure the rice won't stick together and stays fluffy)
  • heat oil in a frying pan and add the chopped scallions
  • fry the egg and rice mixture till crispy and delicious!
  • mmm fried rice
