Chicken Focaccia Sandwich With Mango Salsa

- 3 boneless/skinless chicken breasts shopping list
- 1 large yellow onion shopping list
- pepperoncini peppers shopping list
- Mozzarella shopping list
- feta (whole not crumbled) shopping list
- Smoked Swiss or regular swiss cheese shopping list
- 1 large tomato shopping list
- Fresh oregano shopping list
- Fresh thyme shopping list
- S & P shopping list
- red pepper flakes shopping list
- stone ground mustard shopping list
- horseradish shopping list
- olive oil shopping list
- 6 Focaccia rolls shopping list
- 1 cup Chardonnay shopping list
- * note: dried oregano and thyme may be substituted for fresh if not available. Fresh is definitely better. shopping list

How to make it
- Split chicken breasts.
- Sprinkle salt, pepper, olive oil and a little red pepper flake on chicken.
- Grill on high heat until chicken is almost done (be careful not to over-cook chicken...nice grill marks on the outside are the ultimate goal, while being slightly undercooked in the center).
- Take off grill and set aside.
- Lightly brush olive oil on focaccia rolls.
- Grill rolls on high heat for a few moments.
- Slice yellow onion and pepperoncinis very thinly and add to saute pan with olive oil on medium heat.
- Add oregano, thyme, white wine, black pepper and pepperoncinis to saute pan.
- Saute for 2-3 minutes.
- Spread mustard and horseradish on both sides of focaccia rolls (amount is varied on personal taste).
- Place one piece of chicken on each roll.
- Add sliced mozzarella, sliced feta, and swiss.
- Place on cooking sheet (make sure all sandwich halves are facing up).
- Broil at 350 degrees until cheese is nice and melted (and chicken is done in center).
- Remove from oven and layer on cooked onion/peppers/herbs.
- Slice in half and add thinly sliced tomato to liking.
- Serve with mango salsa on side. Garnish with cilantro stalks.
- Mango Salsa:
- Dice mango into small cubes.
- Dice tomatoes into same sized cubes (about 1/3 amount of mango).
- Chop cilantro.
- Combine mango, cilantro, tomatoes, pinch of salt, and juice of 1 lime in bowl. Mix well.
- **The mango salsa works well being spooned onto a bite of sandwich, or eaten after a bite of the chicken sandwich. Experiment with different combinations.
