Chicken Focaccia Sandwich With Mango Salsa Recipe
This is a perfect summer sandwich. Lots of flavor combinations. Finishes perfectly with a Moscato blend wine, or a buttery Chardonnay.

  • Sandwich:
  • 3 boneless/skinless chicken breasts
  • 1 large yellow onion
  • Pepperoncini peppers
  • Mozzarella
  • Feta (whole not crumbled)
  • Smoked Swiss or regular swiss cheese
  • 1 large tomato
  • Fresh oregano
  • Fresh thyme
  • S & P
  • Red pepper flakes
  • Stone ground mustard
  • Horseradish
  • Olive oil
  • 6 Focaccia rolls
  • 1 cup Chardonnay
  • * note: dried oregano and thyme may be substituted for fresh if not available. Fresh is definitely better.
  • Mango salsa:
  • 1 mango
  • 1/2 bunch cilantro
  • 1 lime
  • Tomato

Directions
  1. Split chicken breasts.
  2. Sprinkle salt, pepper, olive oil and a little red pepper flake on chicken.
  3. Grill on high heat until chicken is almost done (be careful not to over-cook chicken...nice grill marks on the outside are the ultimate goal, while being slightly undercooked in the center).
  4. Take off grill and set aside.
  5. Lightly brush olive oil on focaccia rolls.
  6. Grill rolls on high heat for a few moments.
  7. Slice yellow onion and pepperoncinis very thinly and add to saute pan with olive oil on medium heat.
  8. Add oregano, thyme, white wine, black pepper and pepperoncinis to saute pan.
  9. Saute for 2-3 minutes.
  10. Spread mustard and horseradish on both sides of focaccia rolls (amount is varied on personal taste).
  11. Place one piece of chicken on each roll.
  12. Add sliced mozzarella, sliced feta, and swiss.
  13. Place on cooking sheet (make sure all sandwich halves are facing up).
  14. Broil at 350 degrees until cheese is nice and melted (and chicken is done in center).
  15. Remove from oven and layer on cooked onion/peppers/herbs.
  16. Slice in half and add thinly sliced tomato to liking.
  17. Serve with mango salsa on side. Garnish with cilantro stalks.
  18. Mango Salsa:
  19. Dice mango into small cubes.
  20. Dice tomatoes into same sized cubes (about 1/3 amount of mango).
  21. Chop cilantro.
  22. Combine mango, cilantro, tomatoes, pinch of salt, and juice of 1 lime in bowl. Mix well.
  23. **The mango salsa works well being spooned onto a bite of sandwich, or eaten after a bite of the chicken sandwich. Experiment with different combinations.
