How to make it

  • Combine potatoes and 2 cups water in a medium sauce pain and bring to a boil.
  • Cover saucepan then reduce heat and simmer 15 minutes.
  • Drain and allow to cool. Then peel and cut into 1/4" slices and set aside.
  • Cook peas in small amount of boiling water 15 seconds then drain and rinse under cold water.
  • Combine potatoes peas, celery, green onions and apple slices and toss well.
  • Combine remaining water, vinegar, oil, dill weed, sugar and a dash of salt.
  • Add to potato mixture tossing gently to coat then cover and chill 1 hour.
