Durango Potato Salad

- 2 pounds small red potatoes shopping list
- 10 ounce can diced tomatoes with green chilies shopping list
- 1/2 cup mayonnaise shopping list
- 2 tablespoons spicy brown mustard shopping list
- 1 cup chopped celery shopping list
- 2 green onions sliced shopping list
- 3 slices cooked bacon crumbled shopping list
How to make it
- In a large saucepan boil potatoes in enough water to cover 15 minutes.
- Drain and cool slightly then cut into quarters.
- Meanwhile in a large bowl combine tomatoes, mayonnaise and mustard.
- Add potatoes, celery, green onions and bacon then toss to coat.
- Cover and refrigerate 1 hour.
