Irish Soda Bread Recipe
I make this for dinner if we are having soup or stew...I have to put everyone on rations here or they fill up on the bread and have no room left for the main meal.

Ingredients
  • 4c all purpose flour
  • 1/4c sugar
  • 1T baking powder
  • 11/2tsp salt
  • 1tsp baking soda
  • 1/4c butter
  • 2 eggs
  • 13/4c buttermilk
  • VARIATION: After cutting in the butter add 1/2cup each of grated cheddar and currants. Add 2 tsp caraway seeds.

Directions
  1. Combine dry ingredients. Cut in butter until mixture resembles fine crumbs.
  2. Beat together eggs and buttermilk; Add to flour mixtureall at once.
  3. Stir with fork to make a soft dough.(Dough will be sticky)
  4. Knead on a floured surface until dough is smooth; then form into a ball; flatten into a 8" disk.
  5. Place on lined baking sheet; Cut an X into top of loaf.
  6. Bake at 350F for 1 hour or until loaf sounds hollow when tapped.
