Grilled Cajun Andouille And Chicken Pasta Recipe
This is one of my favorite recipes. Its a good all year round pasta. Goes great with a Pinot Noir, or Riesling.

Ingredients
  • 1 Package pre-cooked Cajun andouille style sausage (6 links) Aidells brand works well with this dish.
  • 2 boneless/skinless chicken breasts
  • 1 cup of sun dried tomatoes
  • 3 medium sized tomatoes
  • 1 bunch fresh basil
  • Chicken stock
  • Garlic
  • Butter
  • Riesling or Gewürztraminer (don't use cheap stuff)
  • Olive oil
  • Parmesan
  • Crumbled feta
  • Penne Pasta

Directions
  1. Slice chicken breasts into halves.
  2. Marinate chicken in wine, salt, garlic and pepper for 15 minutes.
  3. Grill the pre-cooked sausages until well done on the outside. Put aside and slice into diagonal 1/4 inch slices. Make SURE the sausages are completely cooled before you do this).
  4. Grill chicken, put aside and cut into roughly the same sized pieces as the sausage. (Remember to let the chicken cool).
  5. In a large saute pan, add a generous amount of olive oil on low heat.
  6. Mince 4-5 cloves of garlic.
  7. Roughly chop basil.
  8. Julienne sun dried tomatoes.
  9. Chop fresh tomatoes into medium sized cubes.
  10. Add garlic, 1/2 of basil, and sun dried tomatoes to saute pan. Simmer for 5 or so minutes.
  11. Turn burner to medium heat. Add tomatoes, 2 cups white wine, and 2 cups chicken stock to saute pan. Simmer for 5 minutes.
  12. Add approx. 1/5 cube of butter. Cook until melted. Poor mixture into bowl.
  13. Turn heat to high, and add sliced sausage and chicken to saute pan. Stir often for about 2 minutes.
  14. Add sauce to pan, and cooked penne pasta. Cook until all is heated well.
  15. Finish with lots of Parmesan and crumbled feta; add remainder of chopped basil.
  16. *Some people may find that some salt may be needed. Depending on the saltiness of the butter you're using, this will depend.
