Grilled Cajun Andouille and Chicken Pasta

- 1 Package pre-cooked Cajun andouille style sausage (6 links) Aidells brand works well with this dish. shopping list
- 2 boneless/skinless chicken breasts shopping list
- 2-3 sun dried tomatoes shopping list
- 3 medium sized tomatoes shopping list
- 1 bunch fresh basil shopping list
- chicken stock shopping list
- garlic shopping list
- butter shopping list
- Riesling or Gewürztraminer shopping list
- olive oil shopping list
- Parmesan shopping list
- Crumbled feta shopping list
- penne pasta shopping list
How to make it
- Slice chicken breasts into halves.
- Marinate chicken in wine, salt, garlic and pepper for 15 minutes.
- Grill the pre-cooked sausages until well done on the outside. Put aside and slice into diagonal 1/4 inch slices. (Make SURE the sausages are completely cooled beforeslicing).
- Grill chicken, put aside and cut into roughly the same sized pieces as the sausage. (Remember to let the chicken cool before slicing).
- In a large saute pan, add a generous amount of olive oil on low heat.
- Mince 4-5 cloves of garlic.
- Roughly chop basil.
- Julienne sun dried tomatoes.
- Chop fresh tomatoes into medium sized cubes.
- Add garlic, 1/2 of basil, and sun dried tomatoes to saute pan. Simmer for 5 or so minutes.
- Turn burner to medium heat. Add tomatoes, 2 cups white wine, and 2 cups chicken stock to saute pan. Simmer for 5 minutes.
- Add approx. 1/5 cube of butter. Cook until melted. Poor mixture into bowl.
- Turn heat to high, and add sliced sausage and chicken to saute pan. Stir often for about 2 minutes.
- Add sauce to pan, and cooked penne pasta. Cook until all is heated well.
- Finish with lots of Parmesan and crumbled feta; add remainder of chopped basil.
- *Some people may find that some salt may be needed. Depending on the saltiness of the butter, you'll have to use your own judgement.
