Berry Compote For Pancakes Recipe
This is a quick easy alternative to syrup on pancakes or french toast. It's good for the family and impressive for company.

Ingredients
  • 1 pkg frozen blueberries
  • 1/4 cup sugar, organic sugar or Sucanat
  • 1/4 cup water
  • 1 tsp. Arrowroot powder

Directions
  1. Simmer the water and sugar toether until reduced and bubbly.
  2. Add the frozen berries and allow them to cook until they pop.
  3. Whisk in the arrowroot powder and cook until sauce becomes bubbly and thick.
  4. Serve immediately with the pancakes (I have also used this as a leftover the next day).
