I myself dont boil the water. Then you would need much more ice to cool it down to drinking temperatures.
For the cinnamon, thats a nice mix of Indian and Colombian cultures, considering that cinnamon originates in India and surrounding areas.
As another modification I often prepare Aguapanela in the evening throwing some cardamoms into the mix which spread some flavour through the night.

I know that they use gur in Pakistan and india, but I thought real gur is made of date sugar.
Anyway, you can use gur, also to make some nice milk rice dishes like kheer (I hope I have spelled that right)
You can also use gula melaca instead of gur or panela when you are here in Singapore.
