Hummus Me Tahini

- 1 cup dried chick peas shopping list
- 1/4 teaspoon baking soda shopping list
- 2 teaspoons tahini shopping list
- 1/3 cup water shopping list
- juice of 1 lemon shopping list
- 1/4 cup olive oil shopping list
- 2 garlic cloves shopping list
- 1/2 teaspoon ground coriander shopping list
- 1/2 teaspoon ground cumin shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 teaspoon chopped fresh parsley shopping list
How to make it
- Wash chick peas then soak overnight with baking soda in cold water to cover.
- The following day drain and wash chick peas then cover with fresh water.
- Bring to a boil then lower heat and simmer until tender about 2 hours.
- Drain and push through sieve or food mill discarding coarse fibers remaining in sieve.
- Meanwhile put tahini in a small bowl and beat with water until dissolved using a whisk or fork.
- Beat briskly with whisk.
- Add tahini mixture a little at a time to chicken peas alternating with juice and oil.
- When all has been added crush garlic over mixture and sprinkle with spices, salt and pepper.
- Add parsley then beat 1 minute longer and chill overnight.
- Serve cold sprinkled with additional chopped parsley.
