Tuna Macaroni Salad Recipe
Every summer You go to a picnic and end up with elbow macaroni and mayonnaise on your plate and somebody calls this macaroni salad. Which part is the salad? This salad is a combo of my mom's and a few things that I love thrown in.

Ingredients
  • 1 lb. small shells
  • Mayonnaise to taste; at least 3 cups
  • 1 lg can of light-meat tuna packed in water; drained well
  • 4 hard- boiled eggs, cooled and chopped
  • 1 tsp. yellow mustard
  • 5 stalks celery minced and squeezed through a napkin or cheesecloth
  • 1 large carrot shredded and squeezed through a napkin or cheesecloth
  • 2 tbs fresh parsley chopped
  • Sea Salt
  • Course ground pepper; lots of it.
  • Depending on the Party suggestions:
  • Peas
  • Shrimp
  • Red Onion

Directions
  1. Cook macaroni according to box directions. Drain and cool
  2. Combine all of the ingredients
  3. Refrigerate and taste before serving to see if needs more mayo, salt or pepper

This is very much like the one I make. I add a few green onions. It is a wonderful salad, and especially good with shrimp.



My mother used to make tuna-macaroni salad every summer! I don't usually put tuna in mine, though I do like it that way. I do, however, put sliced pimento-stuffed green olives and tiny cubes of cheddar cheese. It just might be time to throw a can of tuna in it!
