Cranberry Meatballs

- 2 eggs, beaten shopping list
- 1 c dry bread crumbs shopping list
- 1/3 c minced fresh parsley shopping list
- 1/3 c ketchup shopping list
- 2 T finely chopped onion shopping list
- 2 T soy sauce shopping list
- 2 garlic cloves, minced shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 2 lbs. ground beef (for tender meatballs use 1 lb lean beef and 1 lb ground turkey - so yummy, and less fat.) shopping list
- SAUCE: shopping list
- 1 can (16 oz) whole-berry cranberry sauce shopping list
- 1 bottle (12 oz) chili sauce shopping list
- 1 T brown sugar shopping list
- 1 T prepared mustard shopping list
- 1 T lemon juice shopping list
- 2 garlic cloves, minced shopping list
How to make it
- In a bowl, combine the first nine ingredients.
- Add beef and mix well.
- Shape into 1 inch balls.
- Place in an ungreased 15-in. x 10-in. x 1-in baking pan.
- Bake, uncovered, at 450 degrees for 8-10 minutes or until no longer pink.
- Transfer with a slotted spoon to a slow cooker or chafing dish.
- Combine sauce ingredients in a saucepan; simmer for 10 minutes,
- stirring occasionally. Pour over meatballs. Serve warm.
