Artichoke Soup

- 2 pounds of artichokes shopping list
- 2 medium onions, chopped coarsely shopping list
- 3 c milk shopping list
- 8 c stock (vegetable is best, but any stock is good) shopping list
- 1 Tbsp white wine vinegar shopping list
- 1 Tbsp lemon juice shopping list
- 12 white peppercorns shopping list
How to make it
- Take the hearts from the artichokes.
- Place the artichoke hearts, onions, and peppercorns in the stock with 1 c milk.
- Bring to a boil, and simmer for 1 hour.
- Remove the peppercorns, and blend the soup with the lemon juice and vinegar.
- Return to pan, stir in 2 c. milk and salt to taste.
- Bring to a boil.
- Serve with croutons.
