Artichoke Soup Recipe
A delicate soup that uses te artichoke not just as the background flavor, but also as a thickener.

Ingredients
  • 2 pounds of artichokes
  • 2 medium onions, chopped coarsely
  • 3 c milk
  • 8 c stock (vegetable is best, but any stock is good)
  • 1 Tbsp white wine vinegar
  • 1 Tbsp lemon juice
  • 12 white peppercorns

Directions
  1. Take the hearts from the artichokes.
  2. Place the artichoke hearts, onions, and peppercorns in the stock with 1 c milk.
  3. Bring to a boil, and simmer for 1 hour.
  4. Remove the peppercorns, and blend the soup with the lemon juice and vinegar.
  5. Return to pan, stir in 2 c. milk and salt to taste.
  6. Bring to a boil.
  7. Serve with croutons.
