Ingredients
  • 1 C. reduced fat buttermilk (or regular)
  • 2 or 3 T curry powder
  • 2 or 3 t kosher salt
  • 1 t ground black pepper
  • 8 pieces chicken (bone in)
  • 1/2 C almond meal
  • 1 t chipotle chili powder

Directions
  1. Wash and pat dry the chicken pieces and put into a large bowl.
  2. Mix together the curry, salt, pepper, and buttermilk. Pour over the chicken and mix well to coat.
  3. Marinate in the fridge for 6-24 hours.
  4. Preheat oven to 350 degrees.
  5. Place chicken in a foil-lined baking dish. Feel free to pour on any marinade left in the bowl to thoroughly coat the pieces.
  6. Mix the chili powder into the almond meal and sprinkle over the chicken pieces to cover evenly.
  7. Bake uncovered for 50 min. to 1 hour or until the chicken is done and the skin is crunchy and brown.
  8. Serve with a salad of mixed greens, pistachios, and crumbled goat cheese for a fresh and similarly "not-quite-traditional" side.
