Chicken And Ham Pie Recipe

Ingredients
  • 1/2 ounce butter
  • 1 tablespoon vegetable oil
  • 1 white onion finely chopped
  • 4 chicken thighs skinned
  • 4 ounces cooked ham diced
  • 2 courgettes sliced
  • 1 tablespoon plain flour
  • 2 tablespoons fresh parsley chopped
  • 5 ounces milk
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 8 ounces puff pastry thawed
  • 5 ounces sour cream
  • 2 medium eggs
  • 1 beaten egg to glaze

Directions
  1. Heat butter and oil in a frying pan then add onion and cook 5 minutes.
  2. Add chicken and cook until browned on all sides.
  3. Preheat oven to 350.
  4. Using a slotted spoon transfer chicken and onions to a pie dish.
  5. Arrange the ham and courgettes on top.
  6. Add flour to pan and cook for a few seconds.
  7. Stir in parsley and gradually add milk stirring until sauce thickens.
  8. Pour over chicken mixture then cover with foil and bake 30 minutes.
  9. Raise oven temperature to 400.
  10. Roll out pastry to about 2" larger than pie dish.
  11. Beat together cream and eggs then stir into chicken mixture.
  12. Cut a strip of pastry then moisten and fit around edge of pie dish.
  13. Cover with remaining pastry and score across top to decorate.
  14. Brush with beaten egg and bake 30 minutes.
  15. Allow to stand 10 minutes before serving.
