Dilly Lamb And Potato Stew Recipe
A simple lamb and potato dish made easy in the slow cooker. Great served with an onion/dill bread and simple baby greens salad.

Ingredients
  • 10 red potatoes, cubed
  • 1 onion, chopped
  • 6-8 sprigs fresh dill or about 2t dried
  • 4lbs lamb stew meat, cut into bite size pieces
  • 1 1/4 cups vegetable, pork or chicken stock
  • 1T cornstarch
  • touch of honey(about 2t)
  • juice from 1 lemon
  • salt and pepper

Directions
  1. Add potatoes, onion, lamb, dill and stock to slow cooker.
  2. Cook on low 6-8 hours.
  3. Add cornstarch to a small amount of water to make slurry.
  4. When stew is tender, add slurry and honey and cook, uncovered, until juices thicken slightly, about 30-45 minutes longer.
  5. Stir in lemon juice just before serving.
