Waioli Tea Room Coconut Pie

- 2 cups milk shopping list
- 1/4 cup grated coconut shopping list
- 1/4 cup granulated sugar shopping list
- 1/4 teaspoon salt shopping list
- 4 egg yolks shopping list
- 3 tablespoons cornstarch shopping list
- 1/2 cup granulated sugar shopping list
- 1 tablespoon butter shopping list
- 1 teaspoon vanilla shopping list
- 2 drops almond extract shopping list
- 1 single crust pie shell shopping list
- 4 egg whites shopping list
- 1/4 teaspoon cream of tartar shopping list
- 1/2 cup granulated sugar shopping list
- 1/4 teaspoon salt shopping list
How to make it
- Mix first four ingredients in top of a double boiler.
- Place over but not touching water then bring water to a boil.
- Mix egg yolks, cornstarch and remaining sugar together and add to custard mixture in pan.
- Bring to boil and cook until thickened stirring frequently.
- Mix butter vanilla and almond extract together then add to thickened custard.
- Pour into baked and cooled pie shell then top with meringue.
- Beat egg whites until stiff.
- Mix salt, cream of tartar and sugar together and add a little at a time to egg whites.
- Beat mixture until stiff and stands in peaks.
- Spread over pie being sure to touch crust all around.
- Bake at 350 for 20 minutes.
