English Raspberry Tart Recipe
This is an incredible pie if you like raspberries, which I do. This is another delightful recipe that I obtained from my Sunday School teacher. She makes the most amazing desserts. This is one she makes often to our satisfaction. Enjoy

Ingredients
  • 1/4 pound butter
  • 9" baked pastry shell
  • 1/4 cup almonds shelled
  • 1/4 cup caster sugar
  • 1 teaspoon distilled rose water
  • 2 large eggs
  • 1-1/2 cups fresh raspberries

Directions
  1. Heat oven to 400.
  2. Dice butter and barely melt in a small saucepan over low heat.
  3. Remove from heat and add sugar then stir in ground almonds, rosewater and lightly beaten eggs.
  4. Tip chilled berries into pie shell spreading evenly then pour almond mixture over fruit.
  5. Bake 40 minutes until topping is pale gold and puffed up.

Distilled rosewater is a rare ingredient here in Missouri...but I'm willing to learn and this pie sounds wonderful. Now to distill some roses!
