Toasty Walnut Muffins

- 2 tablespoon quick cooking rolled oats shopping list
- 1/4 cup unbleached flour shopping list
- 1 tablespoon sugar shopping list
- 1/2 teaspoon baking powder shopping list
- 1/8 teaspoon ground cinnamon shopping list
- 1 large beaten egg yolk shopping list
- 1 tablespoon cooking oil shopping list
- 1 tablespoon milk shopping list
- 2 tablespoons broken walnuts toasted shopping list
- 1 tablespoon raisins shopping list
- 1 teaspoon unbleached flour shopping list
- 1/2 teaspoon brown sugar shopping list
- 1/2 teaspoon butter shopping list
How to make it
- Stir together oats and 1 tablespoon warm water then allow to stand 5 minutes.
- Meanwhile stir together 1/4 cup flour, sugar, baking powder, cinnamon and salt.
- Stir egg yolk, oil and milk into oat mixture then add to dry ingredients stirring just until moist.
- Fold in 5 teaspoons of the walnuts and raisins.
- Line two 6 ounce custard cups with paper baking cups and fill 2/3rd full.
- Combine 1 teaspoon flour, brown sugar, butter and remaining walnuts.
- Sprinkle atop muffins then microwave uncovered on 100% power for 1-1/2 minutes.
- Remove from custard cups then allow to stand on wire rack for 5 minutes then serve warm.
