TOASTY WALNUT MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ludwig Estate in Temple Texas in 1984.

Ingredients
  • 2 tablespoon quick cooking rolled oats
  • 1/4 cup unbleached flour
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon ground cinnamon
  • 1 large beaten egg yolk
  • 1 tablespoon cooking oil
  • 1 tablespoon milk
  • 2 tablespoons broken walnuts toasted
  • 1 tablespoon raisins
  • 1 teaspoon unbleached flour
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon butter

Directions
  1. Stir together oats and 1 tablespoon warm water then allow to stand 5 minutes.
  2. Meanwhile stir together 1/4 cup flour, sugar, baking powder, cinnamon and salt.
  3. Stir egg yolk, oil and milk into oat mixture then add to dry ingredients stirring just until moist.
  4. Fold in 5 teaspoons of the walnuts and raisins.
  5. Line two 6 ounce custard cups with paper baking cups and fill 2/3rd full.
  6. Combine 1 teaspoon flour, brown sugar, butter and remaining walnuts.
  7. Sprinkle atop muffins then microwave uncovered on 100% power for 1-1/2 minutes.
  8. Remove from custard cups then allow to stand on wire rack for 5 minutes then serve warm.
