Apple Crunch Muffins

- 1-1/2 cups unbleached sifted flour shopping list
- 1/2 cup granulated sugar shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 teaspoons ground cinnamon shopping list
- 1/4 cup vegetable shortening shopping list
- 1 large egg slightly beaten shopping list
- 1/2 cup milk shopping list
- 1 cup tart apples peeled cored and grated shopping list
- Topping: shopping list
- 1/4 cup brown sugar shopping list
- 1/4 cup chopped pecans shopping list
- 1/2 teaspoon ground cinnamon shopping list
How to make it
- Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl.
- Cut in shortening with pastry blender until fine crumbs form.
- Combine egg and milk then add to dry ingredients all at once stirring just enough to moisten.
- Stir in apples then spoon batter into paper lined muffin pan cups filling 2/3 full.
- Combine topping ingredients then sprinkle over muffins.
- Bake at 375 for 25 minutes then serve hot with butter and jam.
