Spicy Apricot Oat Muffins Recipe
SPICY APRICOT OAT MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mason Estate in Allen Texas in 1988.

Ingredients
  • 2 cups unbleached flour sifted
  • 1/2 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup quick cooking oats
  • 1 cup chopped dried apricots
  • 1/2 cup chopped walnuts
  • 2 large eggs slightly beaten
  • 1-1/3 cup milk
  • 1/4 cup vegetable oil

Directions
  1. Sift together flour, sugar, baking powder, salt and pumpkin pie spice into large mixing bowl.
  2. Stir in oats, apricots and walnuts.
  3. Combine eggs, milk and oil in small bowl then blend well.
  4. Add all at once to dry ingredients stirring just enough to moisten.
  5. Spoon batter into greased muffin pan cups filling 2/3 full.
  6. Bake at 350 for 30 minutes then serve hot with butter and your favorite jam.
