Spicy Apricot Oat Muffins

- 2 cups unbleached flour sifted shopping list
- 1/2 cup granulated sugar shopping list
- 3 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons pumpkin pie spice shopping list
- 1/2 cup quick cooking oats shopping list
- 1 cup chopped dried apricots shopping list
- 1/2 cup chopped walnuts shopping list
- 2 large eggs slightly beaten shopping list
- 1-1/3 cup milk shopping list
- 1/4 cup vegetable oil shopping list
How to make it
- Sift together flour, sugar, baking powder, salt and pumpkin pie spice into large mixing bowl.
- Stir in oats, apricots and walnuts.
- Combine eggs, milk and oil in small bowl then blend well.
- Add all at once to dry ingredients stirring just enough to moisten.
- Spoon batter into greased muffin pan cups filling 2/3 full.
- Bake at 350 for 30 minutes then serve hot with butter and your favorite jam.
