Lemon Butter Chicken Recipe
LEMON BUTTER CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Delaney Estate in Waco, Texas in 1994.

Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 boneless skinless chicken breasts pounded to 1/4" thickness
  • 1/2 cup chicken broth defatted
  • 1/4 cup lemon juice
  • 2 tablespoons butter flavored sprinkles
  • 2 tablespoons butter
  • Heat 1 tablespoon oil in a nonstick skillet over medium high heat.

Directions
  1. Combine flour, salt and pepper on a plate then dredge each chicken breast half in mixture.
  2. Cook 4 halves 2 minutes on each side until golden brown and no longer pink on the inside.
  3. Remove from pan and keep warm.
  4. Add remaining oil to pan and cook remaining chicken then put with others to keep warm.
  5. Remove pan from heat and add chicken broth, lemon juice, butter sprinkles and butter.
  6. Place pan on low heat and stir until slightly thickened for 2 minutes.
  7. Pour sauce evenly over chicken and sprinkle with parsley before serving.
