How to make it

  • Heat a large nonstick skillet coated with cooking spray over medium high heat.
  • Add chicken and sprinkle with salt and pepper.
  • Cook 2 minutes on each side then remove from pan.
  • Heat oil in pan over medium high heat then add carrots, onion and garlic and cook 2 minutes.
  • Add mushrooms and cook 5 minutes then sprinkle with flour and cook 2 minutes stirring often.
  • Add broth and thyme then bring to a boil and cook until slightly thickened stirring frequently.
  • Return the chicken to pan then cover and reduce heat then simmer 10 minutes longer.
  • Garnish with chives and serve immediately.
