Mushroom Smothered Chicken Recipe

Ingredients

4 boneless skinless chicken breasts

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 tablespoon vegetable oil

2 cups carrots sliced diagonally

1 cup onion sliced

1 clove garlic

16 ounces sliced mushrooms

1/4 cup flour

1 can chicken broth

1 teaspoon thyme

Fresh chives chopped

Directions

Heat a large nonstick skillet coated with cooking spray over medium high heat.

Add chicken and sprinkle with salt and pepper.

Cook 2 minutes on each side then remove from pan.

Heat oil in pan over medium high heat then add carrots, onion and garlic and cook 2 minutes.

Add mushrooms and cook 5 minutes then sprinkle with flour and cook 2 minutes stirring often.

Add broth and thyme then bring to a boil and cook until slightly thickened stirring frequently.

Return the chicken to pan then cover and reduce heat then simmer 10 minutes longer.

Garnish with chives and serve immediately.
