Mushroom Smothered Chicken

- 4 boneless skinless chicken breasts shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1 tablespoon vegetable oil shopping list
- 2 cups carrots sliced diagonally shopping list
- 1 cup onion sliced shopping list
- 1 clove garlic shopping list
- 16 ounces sliced mushrooms shopping list
- 1/4 cup flour shopping list
- 1 can chicken broth shopping list
- 1 teaspoon thyme shopping list
- Fresh chives chopped shopping list
How to make it
- Heat a large nonstick skillet coated with cooking spray over medium high heat.
- Add chicken and sprinkle with salt and pepper.
- Cook 2 minutes on each side then remove from pan.
- Heat oil in pan over medium high heat then add carrots, onion and garlic and cook 2 minutes.
- Add mushrooms and cook 5 minutes then sprinkle with flour and cook 2 minutes stirring often.
- Add broth and thyme then bring to a boil and cook until slightly thickened stirring frequently.
- Return the chicken to pan then cover and reduce heat then simmer 10 minutes longer.
- Garnish with chives and serve immediately.
