Ingredients

1 pound crimini mushrooms, broken into pieces

4 zucchini, quartered then sliced into 1/8 inch slices

1 tablespoon capers

1 teaspoon thyme

2 teaspoon oregano

5 cloves garlic, chopped

1/2 teaspoon salt

1 teaspoon black pepper

4oz Gorgonzola cheese, chopped

1/2 cup olive oil

Directions

Put all ingredients in a large bowl and mix thoroughly

Spread out into a 9"x13" baking dish.

Bake at 400 degrees for 30 minutes.

Stir up the mixture. Will be a bit watery at this point.

Bake about another 20 minutes until much of the water has evaporated and there is a cheesy sauce
