Eastern Fusion Mint Scented Beet Salad

I had fresh mint and wondered how it would go with beets. Then I "discovered" the fresh ginger in the refrigerator...My kids adore warm beets with butter and salt and will eat them cold, with only salt. I had a buncha beets, and wanted something a bit different to amuse myself with. Read more The prep time is negligible: It's the hour or whatever you need to get the beets soft that racks up the time investment. This particular lot of beets had been left on the stovetop unattended for a bit too long. The pot scorched, but the beets were sweet and sensually soft. Ingredients
- 2 cups boiled beets - sliced, chunked, whatever! shopping list
- 1 tart apple (Granny Smith or Anna), sliced into small chunks shopping list
- 1-2 Tbsp rice vinegar shopping list
- 1-2 Tbsp olive oil shopping list
- 1-2 handfuls of mint leaves - chopped shopping list
- 1/2 - 1 inch cube of fresh ginger - minced shopping list
- 1 tsp mined garlic. I used a commercial chopped garlic in oil shopping list
- 1/8-1/4 tsp chili powder - more or less, depending on how hot you like it shopping list
- 1/4 tsp salt - this is an approximation shopping list
- fresh ground pepper - at will shopping list
How to make it
- Mix together.
- I served this chilled but I imagine it would be nice warm, too.
