Ingredients
  • 2 cups boiled beets - sliced, chunked, whatever!
  • 1 tart apple (Granny Smith or Anna), sliced into small chunks
  • 1-2 Tbsp rice vinegar
  • 1-2 Tbsp olive oil
  • 1-2 handfuls of mint leaves - chopped
  • 1/2 - 1 inch cube of fresh ginger - minced
  • 1 tsp mined garlic. I used a commercial chopped garlic in oil
  • 1/8-1/4 tsp chili powder - more or less, depending on how hot you like it
  • 1/4 tsp salt - this is an approximation
  • fresh ground pepper - at will

Directions
  1. Mix together.
  2. I served this chilled but I imagine it would be nice warm, too.
