Omelet Duchesse

- 6 eggs, separated shopping list
- 1/2 c water shopping list
- 2 tsp lemon zest shopping list
- 1/2 c heavy cream shopping list
- 1/2 c sugar shopping list
- 1 tsp vanilla extract shopping list
- 1 tsp ground cinnamon shopping list
- powdered sugar shopping list
How to make it
- Preheat oven to 375
- Combine sugar, water, cinnamon, and zest and bring to a boil.
- When the water is thick enough to start to thread, remove from heat.
- Beat the egg yolks until creamy.
- Add the cream to the egg yolks, and beat.
- Strain the syrup.
- Add the syrup to the yolks and beat.
- Mix in the vanilla.
- Beat the egg whites and fold them in once the yolk mix has cooled.
- Pour into a shallow pie dish and sprinkle the top with powdered sugar.
- Bake in the oven until set an brown, about 10-15 minutes.
