Here is a recipe for all of us who need a little help in getting our "BALLS TO RISE" and you know who you are... lol this is an authentic Neapolitan pizza dough. Enjoy...

Ingredients
  • 1 1/2 cups warm water (105-115°)
  • 1t active dry yeast (half of a ¼ oz. package)
  • 3 cups all-purpose flour
  • I cup cake flour
  • I T. sea salt

Directions
  1. NEAPOLITAN DOUGH
  2. This dough takes 6-8 hours but it's the real deal.
  3. MAKES Four 8" PIZZAS
  4. Combine water and yeast. Proof until foamy, 5-8 min.
  5. Mix flours and salt in bowl of a heavy-duty stand mixer fitted with dough hook.
  6. Add yeast mixture to flour and knead at low speed 30 minutes. (yes! 30 minutes)
  7. Shape dough into a round, place in a lightly oiled bowl, and turn to coat.
  8. Cover bowl with plastic wrap; let dough rise 4 hours in a warm place.
  9. Punch down, divide into 4 pieces, and shape into balls. Brush your balls (this part always makes me giggle ) lightly with oil, cover each ball completely with plastic wrap, and let rise another 2—4 hours.
  10. Shape by pressing fingertips into dough, leaving edge puffy to create a rim. Grasp rim with hands, working your way around the circle. As dough dangles, it stretches while edge stays plump. Form an 8” circle.
  11. Toppings add your favorite pizza toppings
  12. Spray edges with any flavored Pam
  13. Bake Pre heat oven 500° bake till edges are golden and center is bubbly.
  14. Slice and ENJOY!!!!

LOL! I only now caught the balls rising comment. I'm a bit slow. Dumb question alert (the only kind of question I ever ask:) is this recipe easily halved?
