How to make it

  • Preheat oven to 350 degrees.
  • Beat eggs until light and foamy.
  • Add sugar, oil, zucchini and vanilla.
  • Mix well.
  • Combine dry ingredients and add to wet ingredients.
  • Stir until well blended; add nuts and any desired fruit.
  • Pour into 2 9x5x3 loaf pans.
  • Bake at 350 degrees 1 hour or until done.
  • Cool on rack.

    chefmeow - pineapple is excellent in this recipe. I've used both pineapple and apple at the same time which makes a very moist bread..thanks for the 5.

    Ohhh...this sounds so good!! Never thought of putting fruit in it, have always just put nuts in mine. Thanks! (this one also sounds more moist than my recipe!)
