Ingredients

3 eggs

2 cups sugar

1 cup oil

2 cups peeled grated raw zucchini

1/4 tsp baking powder

1 tsp baking soda

1 tsp salt

3 cups all purpose flour

3 tsp vanilla

1 cup nuts, opt.

3 tsp cinnamon

Fruit: apples, pineapple, etc.

Directions

Preheat oven to 350 degrees.

Beat eggs until light and foamy.

Add sugar, oil, zucchini and vanilla.

Mix well.

Combine dry ingredients and add to wet ingredients.

Stir until well blended; add nuts and any desired fruit.

Pour into 2 9x5x3 loaf pans.

Bake at 350 degrees 1 hour or until done.

Cool on rack.
