Chocolate Chip - Peanut Butter Bread Pudding Recipe
This bread pudding is better after it sits a day or two in your refrigerator. That gives the flavors time to set in. Heat up to serve. Tastes wonderful with a little cream poured over the top!

Ingredients
  • 3 c dry bread cubes
  • 1/2 c semisweet chocolate pieces
  • 1/2 c coconut (optional)
  • 2/3 c sugar
  • 1/2 c peanut butter
  • 2 eggs
  • 1 tsp vanilla
  • dash salt
  • 2 c milk

Directions
  1. 1. Grease a 2-qt square baking dish; place bread cubes in prepared dish. Sprinkle with chocolate piecesand, if desired, coconut.
  2. 2. In a medium mixing bowl, beat sugar and peanut butter with an electric mixer on medium speed until well mixed. Beat in eggs, vanilla, and salt. Gradually stir in milk. Pour over bread, pressing down the bread to moisten all.
  3. 3. Bake in a 350 degree oven for 40-45 minutes or until a knife inserted halfway between the edge and the center comes out clean. Serve warm. Makes 8 servings.
  4. **Note: To dry bread cubes, measure 3 1/2 cups fresh bread cubes. Spread in a single layer in a shallow pan; cover with waxed paper and let stand all day or all night.
