Wonderful combination chicken and tarragon. Who doesn't have a ton of green tomatoes in the summer?

Ingredients
  • 4 cups diced green tomatoes
  • 1/2 cup water
  • 1 Tbsp honey
  • 2 Tbsp. oil
  • 2 Tbsp butter
  • 6 pieces of chicken
  • 1 cup heavy cream or half and half
  • 2 Tbsp tarragon
  • salt and pepper, to taste
  • 3 Tbsp. parmesan cheese

Directions
  1. Cook the tomatoes, water and honey for 1/2 hr. Blend or puree.
  2. Preheat oven to 350 degrees.
  3. In skillet, heat oil and butter and brown chicken pieces. Remove these and put into a baking dish.
  4. In bowl combine the green tomato mixture, the cream, tarragon,salt and pepper.
  5. Pour sauce over the chicken.
  6. Bake 45 to 60 minutes. Garnish with the parmesan.
