Bruschetta And Cheese Stuffed Chicken Breasts Recipe
This one I got out of a kraft cookbook and is now one of my favs.

Ingredients
  • 1 (14 1/2 oz.) can Italian style diced tomatoes
  • 1 1/4 cp mozzarella cheese
  • 2 tbls. dried or 1/4 cp fresh parsley
  • 1 pkg. chicken stuffing mix
  • 8 small chicken breasts
  • 1/3 cp Italian dressing
  • 1/4 cp Parmesan cheese

Directions
  1. Mix tomatoes and liquid, 1/2 cp cheese, basil and stuffing together in a large bowl and set aside.
  2. Pound chicken 2 at a time in large ziploc bag (you can use a large can if you don't have a meat pounder)
  3. Fill with stuffing and roll up.
  4. Place in baking dish and drizzle with salad dressing.
  5. Bake 40 mins at 350 degrees.
  6. Sprinkle with remaining cheese and Parmesan.
  7. Bake until cheese is melted.
