Perfect on a summer morning on the balcony. The red onion and the apple really works well together.

Ingredients
  • 6 large free range (organic) eggs
  • Enough mayonaise for your liking
  • 1 apple of your choice (there is so many out there, so to recomend one is just stupid.)
  • 1/2 red onion
  • Salt and pepper

Directions
  1. Boil the eggs for ten minutes
  2. While that is happening you chop the onion quite fine and the apple into centimeter squares.
  3. Peel the eggs and mash the into the mayo with a fork.
  4. The add the apple, red onion and salt and pepper.
  5. I like to serve i on rye bread with some fresh apple juice, but anything will do
