Honey Graham Parfait Recipe
HONEY GRAHAM PARFAIT This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984. Source: Better Homes and Gardens, 1979.

Ingredients
  • 3 egg yolks
  • 1/3 cup honey
  • 2 egg whites
  • 1/8 teaspoon cream of tartar
  • 1 cup heavy cream whipped
  • 1 cup ground walnuts
  • 1 cup graham cracker crumbs
  • 6 walnut halves

Directions
  1. Beat egg yolks in top of double boiler set over hot water on medium heat.
  2. Slowly beat in honey.
  3. Continue cooking beating constantly until lemon colored and three times original volume.
  4. Remove from heat and cool completely in refrigerator.
  5. Whip egg whites with cream of tartar until stiff.
  6. Fold egg whites and whipped cream into egg yolk mixture.
  7. Combine ground walnuts and graham cracker crumbs.
  8. Alternate layers of honey and crumb mixtures in eight glasses.
  9. Garnish with walnut halves.
