How to make it

  • Beat egg yolks in top of double boiler set over hot water on medium heat.
  • Slowly beat in honey.
  • Continue cooking beating constantly until lemon colored and three times original volume.
  • Remove from heat and cool completely in refrigerator.
  • Whip egg whites with cream of tartar until stiff.
  • Fold egg whites and whipped cream into egg yolk mixture.
  • Combine ground walnuts and graham cracker crumbs.
  • Alternate layers of honey and crumb mixtures in eight glasses.
  • Garnish with walnut halves.
